Simon and I just want to say again, how much we enjoyed the Sourdough class today. Roger was an excellent teacher who is obviously passionate about making great bread, which was infectious. We now feel inspired to try out lots of different versions of this amazing bread!

Although I have been making our own bread for years, it was good to go back to basics, forget all my bad habits and re-learn the small miracle of turning water, flour and salt into real bread.
It was a privilege to be taught by Roger, such a knowledgeable and practical teacher. I feel lucky to have been part of a small group (just the four of us) who were keen to learn and also full of fun. The morning was both serious and leavened ( if you’ll forgive the pun) by laughter.
All those loaves of freshly baked bread filled the car with their tempting smell all the way home.

I Had a fabulous day on the Red Dog Bakery Sourdough class.
I’d done a bit of Sourdough at home but with frustratingly mixed results. Soggy bottoms, slumping, flattened dough. Watching a pro and with only 4 people per class, you learn a lot in a day. Books are fine but there is no substitute like one to one teaching from someone who really knows what they are doing. We came home with a box full of fantastic bread and my Sourdough is (almost) as good as Rogers! The day is well worth it, with lovely people and feasting on the amazing pizza produced from the oven at lunchtime.

I attended the Beginners bread making class with artisan baker Roger of Red Dog.
Whilst it is an unnecessary requirement to attend and enjoy the course, I have some experience with a bread machine and a mixer and yet it was great fun going back to the basic methods for bread making and getting a real understanding of the materials and equipment that we would use. Roger gave us great examples and experiences that would allow us to bake bread as a private individual or as a commercial concern.
Being a learner who likes to do things, it was a fabulous chance to make 3 different types of dough (and help with a fourth) that turned into loaves we were allowed to take home and enjoy with family and friends. The fourth dough turned out to be our lunch and it was lovely to enjoy the outcome of our work so quickly.
Roger is a superb teacher with a gentle manner and yet a firm hand to ensure that we learnt the best methods for getting great results. In addition, the follow up information has been useful which allows me to practice the methods. Roger taught us so that it becomes a habit rather than something new.
The scary part of the class was being shown all the pages of extras that go into commercial bread, if you are tired of it and the effects upon you, then this is a class which is well worth attending and enjoying learning the art of bread making from 4 simple ingredients.
Thanks again for another excellent day. Having already done the Sourdough Class it was great to be back at the Back at the Red Dog Bakery.
For the continental Class. Having a small number of students makes it easier to learn and get one to one tuition. Taking all that lovely bread home makes it all the more worthwhile. Great food again for lunch!

I would also like to thank you Sally for the lovely lunch. My starter is alive and well fed. I baked 2 loaves in oblong bannetons 2 days ago and they turned out really well and tasted so good!
Once again thank you for everything you have taught me and thank you for the recipes – I shall use them many times!

Bespoke Beginners Bread
Just the briefest note to thank you both yesterday for your excellent hospitality and attention. I very much enjoyed the day.
I think the passion with which you both ran the course and the bakery venture, the way that everyone was involved (and ‘corrected’ /taught with charm and humour), the excellent lunch, and the finale of everyone leaving with arms filled with freshly baked loaves could not have been bettered. Four is a really good number for individual instruction with no-one being able to feel left out or insufficiently supported. I feel particularly fortunate in how nice the other three course members were. I breathed a sigh of relief that Colin had actually enjoyed being taught by me!
All in all, an excellent and very memorable day.
